Enoteca Pinchiorri is miles away, yet it is with that caustic spirit typical of us Tuscans that Osteria Pinchiorba mispronounces its name. And it does so with a play on words, crossing it with chiorba, a dialect term that in these parts means big head.
And so Pin-chior-ba, a country trattoria, a name that says it all: relaxed atmosphere, few frills, little etiquette, traditional cuisine but revised with flair by a young cook with a decisive flair and a sharp wit.
Her name is Irene, 38 years old, she started out in the dining room and has spent the last ten managing this place, a typical osteria, one of those little places that you would recommend to a friend… ‘do you know a little place in Gambassi? Sure, Pinchiorba!’
Irene chooses local raw materials, and for seasonal products collaborates, for example, with Azienda Agricola Le Caprine – try their spectacular goat cheeses – with Azienda Agricola San Cristoforo, from which she takes her pasta made from ancient grains, and offers local cured meats, compotes and local beers.
Sometimes he surprises the room with fish, which arrives here in the hills from time to time, especially when Irene gets bored of the usual recipes and needs something new.
The list of dishes is mouth-watering: from ravioli with goat’s cheese and saffron to gnudi, from tongue carpaccio to braised cheek, from fried anchovies to sirloin.
Don’t be in a hurry, Irene runs the whole kitchen by herself, sometimes you may have to wait a few minutes longer but every dish is worth the wait.
